Horseradish Grilled Corn Elote
Serves: 4
INGREDIENTS:
- 4 ears corn, husks removed
- 2 tablespoons Gold’s Horseradish Sauce
- 2 tablespoon mayonnaise
- 1 teaspoon lime juice
- ½ teaspoon lime zest
- ½ teaspoon chili powder
- 3 tablespoons cotija cheese
- 3 tablespoons chopped fresh cilantro
Preparation:
- Soak the corn in a pot of cold water for 5 to 10 minutes to prevent burning. Drain, and pat dry with a paper towel.
- Preheat the grill to medium-high heat, and place the corn on the grill, grill for 12 to 15 minutes, flipping every 3 to 4 minutes.
- Remove from the grill, set aside.
- In a small bowl, combine the Gold’s Horseradish Sauce, mayonnaise, lime juice, and lime zest.
- Use a pastry brush to coat the corn, and sprinkle it with chili powder, cotija cheese, and cilantro. Serve with lime wedges.
