Gold’s Cucumber Horseradish Salad
Serves: 4
INGREDIENTS:
- 2 English cucumbers, thinly sliced
- ¼ cup thinly sliced shallots
- ¼ cup roasted sunflower seeds
- 1 tablespoon Gold’s horseradish
- 1 teaspoon honey
- Juice of 1 lemon
- ½ teaspoon lemon zest
- 2 tablespoons olive oil
- Salt and pepper, to taste
- ¼ cup fresh dill
INSTRUCTIONS:
- In a large bowl, combine thinly sliced cucumbers, shallots, and roasted sunflower seeds.
- In a small bowl, whisk together the Gold’s Horseradish, honey, lemon juice and zest, and olive oil. Season with salt and pepper.
- Drizzle the dressing over the cucumbers and toss with fresh dill.
