Chickpea Celery Salad with Horseradish Dressing

Serves: 4 – 6

INGREDIENTS:

  • 1, 14 oz can chickpeas, drained and rinsed
  • 5 stalks celery, thinly sliced diagonally
  • ½ medium red onion, thinly sliced into half moons
  • 2 cups radicchio, shaved
  • 2 cups arugula
  • ½ cup fresh chopped parsley
  • ⅓ cup grated parmesan cheese

DRESSING:

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Gold’s Horseradish
  • 1 tablespoon honey

INSTRUCTIONS:

  1. In a large bowl, combine the chickpeas, celery, red onion, radicchio, and arugula, tossing to combine.
  2. In a small bowl, whisk together the olive oil, lemon juice, horseradish and honey. Drizzle over the salad, and top with chopped parsley and parmesan. Season with salt and pepper, to taste.
