Chickpea Celery Salad with Horseradish Dressing
Serves: 4 – 6
INGREDIENTS:
- 1, 14 oz can chickpeas, drained and rinsed
- 5 stalks celery, thinly sliced diagonally
- ½ medium red onion, thinly sliced into half moons
- 2 cups radicchio, shaved
- 2 cups arugula
- ½ cup fresh chopped parsley
- ⅓ cup grated parmesan cheese
DRESSING:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Gold’s Horseradish
- 1 tablespoon honey
INSTRUCTIONS:
- In a large bowl, combine the chickpeas, celery, red onion, radicchio, and arugula, tossing to combine.
- In a small bowl, whisk together the olive oil, lemon juice, horseradish and honey. Drizzle over the salad, and top with chopped parsley and parmesan. Season with salt and pepper, to taste.
