Beet & Citrus Salad with Horseradish Dressing
Serves: 4
CITRUS INGREDIENTS:
- 5 medium beets, roasted or steamed, peeled
- 1 grapefruit, peeled and cut into ½ inch circles
- 2 medium oranges, peeled and cut into ½ inch circles
- 2 cups arugula
- ¼ cup torn fresh parsley leaves
- ¼ cup shelled roasted pistachios
DRESSING INGREDIENTS:
- 1 medium shallot, finely chopped
- 2 tablespoons apple cider vinegar
- 1 tablespoon Gold’s Prepared Horseradish
- 1 teaspoon honey
- 3 tablespoons extra virgin olive oil
- Salt and pepper, to taste
INSTRUCTIONS:
- Quarter the beets and place in a large bowl or serving platter with the grapefruit, and oranges. Top with the arugula, parsley, and pistachios, tossing to combine.
- In a small bowl, whisk together the shallot, apple cider vinegar, Horseradish and honey. While mixing, slowly drizzle in the oil. Season with salt and pepper, to taste.
- Drizzle the dressing over the salad right before serving.
