Beet & Citrus Salad with Horseradish Dressing

Beet & Citrus Salad with Horseradish Dressing

Serves: 4

CITRUS INGREDIENTS:

  • 5 medium beets, roasted or steamed, peeled
  • 1 grapefruit, peeled and cut into ½ inch circles
  • 2 medium oranges, peeled and cut into ½ inch circles
  • 2 cups arugula
  • ¼ cup torn fresh parsley leaves
  • ¼ cup shelled roasted pistachios

DRESSING INGREDIENTS:

  • 1 medium shallot, finely chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Gold’s Prepared Horseradish
  • 1 teaspoon honey
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper, to taste

INSTRUCTIONS:

  1. Quarter the beets and place in a large bowl or serving platter with the grapefruit, and oranges. Top with the arugula, parsley, and pistachios, tossing to combine.
  2. In a small bowl, whisk together the shallot, apple cider vinegar, Horseradish and honey. While mixing, slowly drizzle in the oil. Season with salt and pepper, to taste.
  3. Drizzle the dressing over the salad right before serving.
