Autumn Apple & Horseradish Salad
Serves: 4
INGREDIENTS:
- 4 cups mixed lettuce
- 1 granny smith apple, thinly sliced
- 2 green onions chopped
- 4oz goat cheese, crumbled
- ⅓ cup caramelized pecans
- ¼ cup dried cranberries
- ¼ cup fresh chopped parsley
- 2 tablespoons Gold’s Prepared Horseradish
- 2 tablespoons red wine vinegar
- 1 teaspoon honey or maple syrup
- ¼ cup extra-virgin olive oil
- Pinch kosher salt
INSTRUCTIONS:
- In a large bowl, combine the lettuce, apples, green onion, goat cheese, pecans, dried cranberries, and parsley.
- In a small bowl, whisk the horseradish, red wine vinegar, and honey. While whisking, add the olive oil until well combined. Season with salt.
- Drizzle the dressing over the salad before serving.
