Peach & Goat Cheese Salad with Honey Mustard Vinaigrette

Serves: 4

SALAD INGREDIENTS:

  • 1 head butter lettuce, torn
  • 2 ripe peaches, cut into 16, ¼-inch wedges
  • ¼ medium red onion, thinly sliced
  • 4 oz goat cheese, crumbled
  • ½ cup fresh basil leaves, torn
  • ¼ cup shelled pistachios, chopped

DRESSING INGREDIENTS:

  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Gold’s Honey Mustard
  • Salt and pepper, to taste

INSTRUCTIONS:

  1. Arrange the lettuce in a large bowl. Top with peaches, red onion, goat cheese, basil, and pistachios.
  2. Whisk the dressing ingredients together and season to taste. Drizzle over the salad and toss gently to combine.
