Peach & Goat Cheese Salad with Honey Mustard Vinaigrette
Serves: 4
SALAD INGREDIENTS:
- 1 head butter lettuce, torn
- 2 ripe peaches, cut into 16, ¼-inch wedges
- ¼ medium red onion, thinly sliced
- 4 oz goat cheese, crumbled
- ½ cup fresh basil leaves, torn
- ¼ cup shelled pistachios, chopped
DRESSING INGREDIENTS:
- 4 tablespoons extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon Gold’s Honey Mustard
- Salt and pepper, to taste
INSTRUCTIONS:
- Arrange the lettuce in a large bowl. Top with peaches, red onion, goat cheese, basil, and pistachios.
- Whisk the dressing ingredients together and season to taste. Drizzle over the salad and toss gently to combine.
